Meet the New Members of The Forge Chester Team

Regular guests may have already spotted or chatted to two invaluable new members of The Forge team – Head Chef, Callum Hawkes and General Manager, Kenny Valentin. The team is thrilled to have such talented people on board, and for those who haven’t met them quite yet are very much looking forward to seeing you soon.

Here’s a little more about them both.

Head Chef – Callum Hawkes

Callum Hawkes

“I’ve been cooking in kitchens since I was young, cooking alongside my mum. I always knew it was what I wanted to do as a career, and I never looked back.”

Head Chef Callum has worked at fabulous establishments all over the UK from Scotland’s AA Rosette Shield Hall to working under Michelin-starred chefs such as Steve Smith at Bohemia in Jersey. Wine lovers may have experienced Callum’s culinary delights while working as Head Chef at the famous Vineyard Hotel in Newbury.

Callum is passionate about nose-to-tail dining, making the best use of every part of the animal and respecting his ingredients.

“Celebrating wild British produce is a passion of mine. Whether that be wild venison or going out myself to forage for mushrooms and herbs. We have such an abundance of amazing ingredients in this country, it’s just about knowing where to look for them.”

General Manager – Kenny Valentin

Kenny Valentin

Kenny Valentin began his hospitality career in Paris, where he worked within Michelin-starred restaurants such as Les Ecuries de Richelieu in Paris, igniting his passion for the hospitality industry.

“I joined The Forge as General Manager in September and am incredibly excited to be part of this vibrant and innovative team. Our customer service style is welcoming and friendly, placing the very highest value on ensuring those who dine with us leave with a truly unforgettable experience.

Since joining The Forge, I have been fascinated by the creativity of our chefs and their ability to build a menu based on seasonal ingredients cooked to perfection. I am very much looking forward to leading our team here as General Manager, bringing innovation to the role whilst building upon the high standards already in place”.
